Production: Once hand-picked in the early morning, the leaves are allowed to naturally wilt before a quick rolling. The bruised leaves then sit overnight and into the next day on covered bamboo trays to further oxidize. They are then exposed to a nitrogen rich environment to initiate the GABA process followed by a final light roast.
Hong Yu (aka Red Jade or Ruby Red) is an internationally recognised, premium grade black tea. It is grown & harvested in limited quantities in the beautiful Sun Moon lake area of Central Taiwan, where the Taiwan Tea Research & Extension Station, in collaboration with local farmers, have developed one of the most truly unique and finest quality black teas in the world. (TRES #18) The tea plant is a cross between an Assam & a local wild tea strain. This particular Hony Yu is processed as an Oolong tea
This tea garden is owned and operated by long time tea grower Mr. Li who grows and makes the tea with his wife and two teenage boys and he is insistent that his tea garden never sees a drop of synthetic pesticide or fertilizer.
