Jun Shan Yin Zhen is one of the Top Ten Chinese Famous Teas. And it is one of the few Chinese yellow teas. It originated in the Junshan Island in the North Hunan Dong Ting Lake. Legend tells that the monks in the Junshan Temples hundreds years ago invented the processing of Junshan Yin Zhen yellow tea – the special Meng Huang (Piling yellow) handling makes this silver needle tea different from green tea or white tea silver needle. The tea color turn to brownish yellow & green (In the market, even in the tea shops on the Junshan Island, we can see some so-called Jun Shan Yin Zhen which looks exactly like white silver needle. (That’s not the real one). The tea gives a kind of sugar flavor and the taste is very sweet mellow. This is the typical yellow tea character. The piling yellow processing reduce the freshness of tea, meanwhile improve the maturity of tea. It is a charming point for yellow tea lovers.
