Farming Methods: Organic farming. Hand picked.
Production: Ball rolled Oolong. Fresh tea leaves picked > placed inside a pressurized barrel and vacuumed until emptied of oxygen. > Infused with nitrogen & kept in barrel for 6 -10 hours > Tea leaves removed from the barrel and lightly roasted to stop further oxidization > Rolled > Dried > Compressed > Rolled > Compressed > Re-dried > Roasted
The leaves are exposed to nitrogen, rhather than oxygen which causes the natural glutamic acid in the tea leaves to be converted to Gamma-Aminobutyric Acid (GABA).
The standard content of GABA per 100g dry weight is 150mg of higher in order to meet the Japanese requirements and to qualify as high quality GABA tea. The GABA content in our teas varies from batch to batch, but it is usually around 200mg/100g.
