Shui Xian was mostly known from Wu Yi Mountain in Fujian Province, China. Around 150 years ago, there was a tea farmer from Quan Zhou City, Fujian who started using Wu Yi processing techniques to produce Wenshan Baozhong Tea in Taiwan. Eventually Wenshan Baozhong tea developed its own unique qualities of a very delicate, lightly oxidized Oolong tea which was very suitable for the local market. Of course this tea has now is become very famous and well known internationally.
In cooperation with a neighboring local tea farmer in Mingjian, Nantou, our colleague used the traditional Wu Yi style to produce this tea – with a higher oxidization level. Arrangement were then made for a veteran tea master, of over 30 years experience, to carefully roast this specially prepared tea using the Wu Yi style processing of Shui Xian Oolong tea.
